mom's secret recipe. i'll tell you what I can.

2 crock pots.
big ole bag of taters - peel them
3 bundles of carrots - peel them
biggest roast you can buy - leave fat on
3 stalks of celery for each pot
1 large onion - cut into rings
that's what I like but you can add more veggies if you like
cut meat into pieces along marbling veins
flour and brown meat in cast iron skillet
put some carrots in both pots
put some taters in both pots
add equal parts meat to both pots
add the rest of the taters and carrots filling each crock pot
I use mom's spice mixture from here but a season pack can be substituted
fill both pots with hot water making sure to wash spices down
now place onion rings on top
turn pots on high
2 hours later take onion rings out and stir - then put rings back and turn pots on low
2 hours later take rings out and stir - then put rings back and put on high
alternate the last 2 steps every 3 hours
add some flour as you do this if you want to thicken the broth.

to give you an idea of cook time - all this went in the pots at 6:30pm and I won't worry about thinking it will be done until at least 8:00 am.

when it is done pitch the onion rings out the window/ back door or leave them if you like onions.

I prefer to have this over some home made layered biscuits.

I'm finally learning how to use a Big Green Egg we bought a while ago. Will be doing my second brisket tomorrow!

just checked the pots and they are done.
now to turn them off and make my biscuits.

so cooked the stew for roughly 16 hours. the meat is fall off the bone tender as are the taters and carrots.

I used to love the biscuits cooked right on the beef stew - once the tops of the biscuits are done, flip the biscuits over and bake until that side is done also. That way the biscuits get that stew flavor cooked right in. :)

I got my mom's recipe for homemade pot pie and it sounds really similar.

Since my wife keeps me around for my cooking, I will be breaking out my Grand Mothers Depression Era Cold Tuna Salad recipe this week. Has become a family favorite even though it was designed to feed the masses generations ago. It is unusual in appearance as the final product is a light pink color due to it's secret ingredient. I usually break it out when the weather gets hot as an alternative for something cool/cold to eat. But with the stress level of 4 family members directly out in this mess as "essential workers" some comfort food is in order.
