I used the Cavalier and Nimble used the Assassin on the same run. While the Assassin was pretty boss, the Cavalier left something to be desired. No one swings at the Paladin or his guard target (unless the module tells them too). I accidentally got swung at once this year though cause the DM was trying to go too fast:

DM: *Pulls out table* And the monster swings at...
Paladin: Wait! I'm guarding the Bard!
DM: *In a slightly upset voice* Well I was going to swing at the Bard, so I guess I'll swing at the Paladin. *Swings twice and misses*

As far as the Paladin -> Cavalier goes

Same:
Guard
Scroll use
Heal

Different:
Immunity to Disease -> Immunity to Fear
3x Detect Evil and 2x Remove Disease -> 2x Remove Fear/Charm/Sleep
Sacrifice -> Righteous Wrath

The Remove Fear/Charm/Sleep was a pretty nice addition. They didn't come into play this year, but I can see those being more useful than Detect Evil and Remove Disease.

I've never actually used Sacrifice. None of our guys have died since I've been playing a 5th level character (which is one of the reasons I'm trying to convince them to move up a difficulty level). Righteous Wrath I could see using, if I could get the DM to swing at me. Maybe if there was a way to improve Guard. Maybe a second guard target, or some way to draw aggro. Drawing aggro may only be limited to evil creatures, but that would still be better than being ignored as a target by most DMs.

I've even dropped every AC item I have accept the Templar set. I'm down to a 28 AC! Do we need a token for this? I might even give up a charm slot for a Shining Beacon (Paladin only): Evil creatures must attack the Paladin.

I know there were several times when I intentionally or advertently (due to Guarded players) attacked the Cavalier or Paladin.

Normally, the Paladin/Cavalier is going to be one of the most heavily armored characters. Monsters with a modicum of intelligence will realize that attacking the most heavily fortified opponent may not be the best option.

As far as the Paladin -> Cavalier goes

Yeah, normally Detect Evil and anti-Disease is pretty weak, so the Fear/Charm protection is better in most circumstances.

Sacrifice is very, very powerful. I have seen it used to good effect many, many times.
