Can't say I'm reccommending it, am very allergic to chocolate. But I've worked with betty crocker cake mixes and recipes in the past with no complaints. So I thought they'd be a good place to check. :)

Yeah,  I'm with DD on this one; I've taken a couple cake decorating/baking classes, doesn't make me an expert, but pretty much every instructor I've had has said they generally use or start with cake mixes.  So, my favorite mix is Duncan Hines; I don't make a lot of chocolate cakes, but for the yellow cake mixes, I'll start with the mix and add a box of cook and serve pudding, usually vanilla, and some merigune powder to help it rise nicely.  I guess you could add a box of chocolate pudding instead.  The pudding mix keeps it moist.<br /><br />Hmm....mousse like icing you are thinking?  If you don't see a brand you like; you MIGHT try Nestle's European Mousse mix; it's in a small box generally in the baking asile; it's insanely easy to make, esp. if you have a stand mixer.  I think it would probably be the consistency you're looking for; try a packet and see.  If not, at least you'll have a really nice mousse dessert. :)

Oooh cakes and cookies.. So evil.  A pity I cannot indulge as much as I'd love to anymore.<br />My vote goes to Oatmeal Peanut Butter Cookies.  They taste better with peanut butter chips.<br /><br />To remind me of this, I sometimes make a small bowl of oatmeal and use 1/2 tsp of cinnamon and 1 tbsp of peanut butter for sweetening.
