I got a bit ridiculous tonight. Been missing the ability to go out and do things pretty hardcore lately, and decided to do something crazy. Since I can't do any crazy, last minute trips in the middle of a pandemic, I went onto a restaurant supply store and ordered some amaroso rolls from Philly. Then I got myself some shaved ribeye, and proceded to cook an incredible Philly cheese steak, just like I used to get at Joe's Cheese steaks (the actual best in Philly). Amaroso roll, shaved ribeye, fried onions, mushrooms, American cheese. Just a touch of ketchup, lots of black pepper. I'm so full now.

Damnit Josh, you and your food porn have me so in the mood to stuff my face with deliciousness and I am already stuffed from an amazing shredded beef Chimi and 2 Jumbo margaritas 2 Hours ago. What's a poor fat man to do ...

Yesterday morning before my dungeon run, I put together a crockpot meal:

Moroccan chicken and squash:
16oz butternut squash (peeled and cut into chunks)
1-2 turnip (peeled and cut into chunks)
1-3 leek (white and light green parts chopped)
1/2 cup golden raisins
4 skin-on, bone-in chicken legs (and thighs) ~3-4 lbs
3 cups chicken broth
2 tablespoons tomato paste
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon turmeric
1 teaspoon ground ginger
Zest and juice of 1 lemon

Put veggies (and raisins) in crock pot, season chicken with salt and pepper, put on top of veggies.
Whisk all seasonings into chicken broth, pour over chicken and veggies. Cover, cook on high 4 hours.

After dungeon, I started the rice to go with it.

Along with rice and water for 2 cups in rice cooker, add:
1/2 cup raisins
1/2 teaspoon cumin
1/2 teaspoon turmeric
1/2 teaspoon cinnamon

For serving, add as you like:
Sliced Green onion
Dried apricots (thin slices)
Cilantro (we don't use this)
Almond slices (also don't use because kids are allergic)
this is not a signature.

Got the right frozen dim sum so it doesn’t taste terrible. Finally worked out our favorites

Covid made us give up on all the family style serving of some of our favorite Asian cuisines...it ended up making it all better for us

These have been a thing, we use pecans for a butter rather than almonds and Dutch Cocoa.

gourmandeinthekitchen.com/paleo-vegan-double-chocolate-cocoa-cookies/

They’re better than most cookies.

Oh and I made these again, so thought I’d share

I've made bacon steaks before (after having them at Morton's steakhouse). Turned out delicious, but takes quite a bit of time.

Growing up, I didn't realize there was actually a "standard" sloppy joe mix that came in its own can. My mom had her own recipe (that I still occasionally use). Uses campbell's chicken gumbo soup, ketchup, and mustard.
