Honestly, encountering a bunch of different human battles, could be pretty amazing. It would require more NPCs, but also has the potential to have more interesting interactions with parties. Replay ability could be pretty awesome if you encounter a different “bandit” each time who has it out for a different PC and is calling insults as they fight. How long has it been since an encounter has used Sneak Attack against the party?

I want to fight an entire group of bandits. That would be fantastic.
Friendly neighbourhood NPC. Do not rob, maim or kill. Else you take 50 points of irresistible damage and I come back to betray you in the next room.

HAAAA! I would argue that wasn't so much an "encounter" as a PVP situation....
