I think dwarven steel was just for common weapons - minotaur hide was for common armors.<br />

I think it was clarified that they couldn't be.  But you could always use them towards the Minotaur Hide (25 common armor).

Yes, shields counted for the hide token.
You should know better than to pick up a duck in a dungeon....
