Just wondering if there is any token or combination of tokens that would grant a Ranger the ability to use shuriken's?

Also, for flavor, allow ranger to throw two of the Side Kick Gib Gub's possible? It looks like a Ranger CAN throw Side Kick Gib Gub (which acts as a +5 shuriken) but can a ranger throw two of them?

Nobody can toss two GibGub's because there's only one Sidekick slot. I doubt it will ever change.

But the ranger could use the sidekick Gib Gub in the offhand and another ranger compatible weapon in the primary hand? Isn’t the Gib Gub sidekick better than the shadow shot token?

I think Grizwald is saying that the Gib Gub is a sidekick and therefore takes the Sidekick slot (max of 1) based on the TDB entry. Since you don't truly equip Gib Gub in the offhand ranged slot, there is no possibility (currently) of getting 2 Gib Gubs as weapons

But the Ranger would slide it in their main hand RANGED slot (puck)… and they could NEVER use it in Melee as their off-hand weapon since it is a missile (ranged) weapon… only the monk could equip it in off-hand in ranged, using second shuriken (not another Gib Gub since can only have one sidekick) correct?

The only tokens that come to mind which grant Rangers the ability to slide a second puck in ranged instead of melee are Charm of Shadow Shot and Ralson's Pendant of the Elder Yew. Neither of these allow a shuriken as the second token (Shadow Shot only slides itself, Ralson's only slides polymorph tokens and only if you are holding a 2H ranged weapon, i.e. not a shuriken), so as far as I am aware Gib Gub is the only shuriken available to Rangers and there is no way of sliding it together with a second shuriken.

It seems like you're looking for a way to slide two pucks as a Ranger with a single ranged attack and have the character's ranged damage bonus apply to both pucks.

There isn't a way to do that.

Shurikens - even if Rangers could use them - wouldn't be usable in by Rangers in the ranged offhand slot as a weapon: For non-Monks Shurikens are simply a one handed, ranged/thrown weapon.

e.g. they'd work the same as something like +1 Thrall Farie-Iron Skull in terms of what slots they could be equipped in and how many you could slide during combat.

Shuriken's also grant a special ability to the Monk class (only) that allows Monks to slide two Shuriken's with a single ranged attack.

To answer your question directly, GibGub's Handy Acorn are shurikens that Rangers can wield.

However, every shuriken entry, including GibGub himself, say that only Monks can throw 2 shuriken per round.
