LOTS of things! I am LOVING the Instant Pot, as it lets me make a really great meal SUPER quickly, which is handy some days. Some favorites in there are:
Goulash
Creamy Chicken Pasta
Salsa Chicken
ANY kind of soup
Beef and noodles

We've been grilling a lot. Jeff got me a Big Green Egg grill YEARS ago for my birthday. The thing has been used so much the gaskets were all deteriorated, the inside was a hot mess, etc, so we cleaned it all up, replaced the gaskets, and put 'er all back together and now it's getting a lot of use. I've made a pork butt, brisket, burgers, and this week....chicken kebabs. Everyone's happy when the grill gets fired up!

I like to cook, so this is my kinda thread! It's kinda like a tv show now though, because you have to plan a meal around what you have or could find at the grocery store that week. Meat is getting to be problematic around here, so I've been buying big packages of hamburger and then making up patties and freezing them. Gotta think ahead!

We don't cook much at all. My wife is on a shake diet through the local hospital, so there is not much cheat time with that. But we did fix kabobs for our anniversary. At a local thrift store we found a Wear-Ever appliance from 1980 called a Kabob-It (check it out on youtube or something). Its perhaps the coolest thing ever. So we went to the store, and although all hotdogs and Cheese weenies were all gone, there were plenty of the artisan sausages (aka expensive) available, so a couple packs of habanero mango and chicken apple along with a yellow onion and green pepper later, and we had anniversary kabobs. Excellent.
I also like to make homemade tomatillo salsa, Sunday omelets and homegrown pawpaw bread.
But its all for me because my wife is much more disciplined than I.

Hickory and cherrywood smoked ribs with a sweet BBQ sauce. No spicy sauce for me. 5 hours at 225 degrees with the last hour or so wrapped in foil to finish the cooking. I prefer spare ribs since they have more meat on the bone. Baby backs are just as good.

As for a side, I'm good with mac and cheese or green bean casserole.

popcorn...not store bought bag style either. picked it up out of the field last fall.

doing it in an old long handled iron popcorn kettle with real butter and just a dash of salt

"Mexican" Pizza: Coat a boboli pizza crust with a little olive oil. Cover with a layer of refried black beans, then a layer of medium spicy salsa (I prefer salsa verde), then cover with a liberal coating of shredded Mexican cheese mix.

Mac 'n' Cheese a la Brian: Make mac and cheese. Two minutes before water is done boiling, add a bunch of broccoli florets. Then when you are adding the cheese mixture, add a packet of tuna. For best result, use sour cream. For slightly healthier results, use nonfat Greek yogurt.

That's the best way. Brings back fond memories of taking it in brown bags to a drive in movie.

Fresh spinach sauteed in extra virgin olive oil and throw in some pin nuts.

Fresh string beans sauteed in extra virgin olive oil with two fresh diced garlic buds after peeling and removing the toxic veins.

Aged Manchego with fresh fig jam. No cooking with this one.

Are three of my favorites.

baking some large taters and frying some bacon. add a little sour cream and some sharp cheddar.

making a huge pot of chili....about 5 gallon. I take some to my dad's. I eat for a few days. and freeze the rest.

oh the quandary. grilled cheese or peanut butter sandwiches to with it?
