manwich with a slice of velveeta. blech! not to my tasting.

however, adding some fritos to my manwich was pretty tasty.

I always preferred the sloppy joe's my mom made over the flavor you get from manwhich. Basically just use a can of Campbell's Chicken Gumbo soup, ground beef, some ketchup, and mustard.

Corn casserole
1 can of corn
1 can of cream corn
1 box of jiffy
1 stick of butter
1 cup of sour cream
Mix then cook at 350 for 45 min

Sorry... The perfect corn casserole (passed down generations):
Ideally 2 LB corn scraped from the cob, but 2 LB frozen cob will do. Thaw it and add 2 eggs. I just mix them in the bags to avoid added dishes.
Spray Pam or whatever on a casserole dish. Layer crumbled crackers, corn/egg, and butter a couple times. Use more butter if using saltines... less if using Club crackers.
Add milk until you can see it. Bake at 350 until golden brown.

i got many of my mom's recipes. i wrote most of them down as we made them together over the years. all that effort/work and when i use her recipes, it is yummy. yummy, yummy, yummy... and still not as good as mom's.

why does moms' cooking always taste better?

hash tonight.

1 big ole roast shredded or chopped. cooked until done in a big pot salt and pepper to taste. add onion powder/chopped onion. cook until done. do not use to much water.
10 lbs peeled taters sliced and added after meat is done.
cook until taters are done.

eat like it is, but i like to put it over biscuits/rolls/etc.

bacon cheeseburgers.

very large frying pan; the kind used for campfire cooking.
3 pounds of ground chuck made into patties - should be 8-10.
2 pounds of platter bacon.
block of velveeta - slice off what you want.
extra sharp cheddar.

throw it all in the skillet together. when the bacon is done, go ahead and put on top of the burgers. then add the cheese right before you take out the burgers. i recommend a turkey baster to keep the grease under control.

It's my annual winter break from work, and I have a few things that I always make during break. First is a lasagna, which we'll get quite a few meals out of. Then there's egg nog, which is delicious and only feels right this time of year. But my favorite is definitely the pineapple pancakes. leftover ham chopped into chunks added to some pinto beans in a large cast iron kettle. slow cook. pour over some homemade cornbread.

i really oopsed. over cooked the cornbread. :(
still workable when you add beans and juice. :P
