I think from a manufacturer perspective onyx are the default plastic colour used for proofs. Total guess but those onyx completion tokens at smaller events might be test runs of a new "part" TD requested from the factory. I don't know if that would have any effect on their ability to order larger runs in that material.

Interesting theory, but proofs we have seen in the past have been the gold color.
